What does one guest actually cost you?
Revenue tells you what came in. This tells you what it took to earn it — rent, supplies and card fees, divided across the guests who walked through the door.

How it works
Rent and supplies are fixed whether you serve fifty guests or two hundred, so they are divided across the month's guests. Card fees are not fixed — they scale with the price, so they are worked out per transaction and added on top.
What it leaves out
Wages, tax and your own time are not in here, and neither is anything you only buy once a year. It is a floor, not a full P&L — and if the margin already looks thin at this level, it is thinner than it looks.
